One-Pot Burrito Bowls
This recipe is one I started making when Jake and I first got married & it has become a staple in our house! Every time I make it (which is like once a week), Jake says how it's his favorite meal. It's more than enough food for the two of us & we usually have leftovers for both of us to have lunch the next day.
I am a connoisseur of one-pot meals because 1) They're usually easy 2) They're usually quick 3) Only one pot to clean! Win-win-win.
Here's what you'll need:
1 lb Ground Turkey
1 cup Rice (uncooked)
2 1/2 cup Chicken Broth
2 tbs Cooking Oil
1/4 Onion, Diced
2 Cloves Minced Garlic (or 1 tsp of Garlic Powder)
1 can Black Beans
1 can Green Chiles
2 tsp Cumin
1 tsp Chili Powder
1/2 cup Frozen Corn
Mexican Cheese (optional)
Step-by-Step:
1. Over medium heat, cook onion and minced garlic in 1 tbs of oil until onion is fragrant.
2. Add ground turkey and cook through. Drain grease and push to half of the pan.
3. On open half of pan, add 1 tbs of oil and the uncooked rice, then let it sit for about a minute.
4. Add black beans and green chiles. Mix. Add chicken broth, cumin and chili powder. Mix.
5. Bring to a boil and then turn down to low. Cover and let simmer for about 15 minutes.
6. Once rice has cooked, mix in frozen corn. Cook for another 2 min. Add cheese mixed in or on top, if desired.
Our favorite way to eat burrito bowls is topped with salsa or pico de gallo, hot sauce and guacamole! Jake loves putting the leftovers in a burrito for lunch the next day, too.
