Fast & Easy Sweet Potato Hash

For the longest time I thought I didn't like sweet potatoes, but once I found out how good they are for you I started incorporating them into my diet. Now I can't get enough!

After working a full day the last thing I want to do is make some elaborate, complicated meal that takes forever to prepare and cook. Pretty much everything I make has to be easy & fast, and preferably in 1 pan. 

While this sweet potato hash *technically* takes 2 pans, it's easy & fast enough to be a perfect weeknight meal!

What's in Sweet Potato Hash?

2 Sweet Potatoes

1 package of Chicken Apple Sausage (4 to 5)

1/2 Onion, diced

1/4 cup Water

1/4 tsp Paprika

3 Eggs

How to Make Sweet Potato Hash

  1. Slice 2 sweet potatoes into small pieces; about 1 inch. Set aside.
  2. Slice package of chicken apple sausage into desired size. Brown in skillet over medium heat in olive oil.
  3. As sausage browns, add diced onion.
  4. Once sausage is browned, add sweet potatoes to skillet. Add water to pan & cover for about 10 minutes.
  5. While sweet potatoes are steaming, cook eggs in separate pan.
  6. Once sweet potatoes are tender, sprinkle paprika and top with the eggs. Serve immediately.

That's it! From start to finish, this meal takes about 20 minutes. This meal makes enough for 2 and is super doable for a weeknight! Enjoy!
